Crispy Crackers for Energy

Homemade crispy crackers….. there is nothing better, the smell, the taste and of course, the crunch!!

I know we don’t all have time to spend hours in the kitchen making everything from scratch… but the next time you have a few minutes to spare and the oven is on, give these a little go!

These tasty little gems are super simple to make and I’m sure you will already have all the ingredients in the kitchen.  Seeds – are such a nutritious food…. sprouted seeds even more so!  But that might be a step too far – meaning you need to organise soaking and sprouting time and then still have time to make them!  So we will go for the easy version here!

Crispy crackers

Crispy Energy Crackers
Ingredients:  Makes about 12 Crackers

1/2 cup chia seeds
1/2 cup sesame seeds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 clove of crushed garlic
1/2 teaspoon cayenne pepper
Salt & pepper to taste
1 & 1/4 cups of water

Method:

Set the oven on at 150C /300ºF / Gas 2.

Then simply mix all the ingredients together and wait ten minutes for the chia seeds to soak up all of the water.

Then using a spatula spread the mixture on a sheet of baking paper on a baking tray. Now,  place another sheet of baking paper over the top and use a rolling pin to smooth out the mixture evenly, to be about 3-4mm thick.

Then divide the mixture into 12 sections cutting through it with a spatula, to make the crackers whichever size you prefer.

Put the baking tray into the pre-heated oven for half an hour.  Then take out the tray, flip the crackers over and bake again for 25 more minutes.

They are done once they are golden and crackable.

You can eat them on their own or with avocado, dip with hummus or add cheese and pickle! Whatever takes your fancy!

Now your ingredients can be interchanged – more sunflower, less pumpkin…. but if you change the chia they won’t stick together that well.  But you can always add other herbs or spices to jazz them up.

Great nourishing food doesn’t always need to be hard to make!
